Description
Using exclusively Go-Hyaku-Man-Goku rice, ideal for sake production, this noble Junmai Ginjo is concocted using FK801-C yeast, native to the region. This yeast is known for its apple essences and requires a slow fermentation process. The personality of this yeast, coupled with an elegant polishing ratio of 55% creates a sake with apple blossom aromas on the nose with ripe fruit flavors on the palate.
This pairs extremely well with whitefish meunières, fresh grilled seafood and even St-Jacques gratinées!
