Atago no Matsu Gin no Iroha Junmai Daiginjo

Description:
This Junmai Daiginjo from Atago no Matsu is made using 100% “Gin no Iroha,” a sake brewing rice cultivated in Miyagi Prefecture. To highlight the natural flavor of the rice, a yeast that minimizes the aroma is used. The result is a clean, low-amino acid profile that provides a sharp, light, and rhythmically changing taste, making it the most crisp sake in the Atago no Matsu series.

Gin no Iroha:
“Gin no Iroha” (Tohoku Sake Rice No. 218) is the second original sake brewing rice from Miyagi Prefecture, debuting in Reiwa 1 (2019), following “Kura no Hana,” which was introduced about 20 years earlier.

– Mother: “Genkimaru”
– Father: “Dewa no Sato”
– Characteristics: Adapted to Miyagi’s climate with excellent cold resistance and high yield. It has large grains with a high shinpaku (white core) occurrence rate, particularly with an eye-shaped shinpaku.
– Name Origin: “Gin” represents “ginmi” (selecting, refining) and “ginjo” (a type of premium sake), while “iroha” signifies fundamentals and is also associated with Goroha Hime, the eldest daughter of Date Masamune, known for her gentle impression.
