Description
Shirasugi Brewery has decided to exclusively use Shokumai* to brew their sake. Their motto is: If the rice is good to eat, it should be good to drink too! Their flagship Daiginjo Product is Kin-Shari, which means “Gold Rice”. The sake is entirely made of Sazanishiki, a rice renown for is low stickiness profile and refreshing taste. The rice is polished to a 50% ratio, meaning that half of the grain only remains producing a sharp taste sake with mellow and gorgeous aromas.
The Brewery is run by only 4 people, completely handcrafting this pleasant and shiny sake in the northern area of Kyoto Prefecture, in the Kyōtango region and close to the coast of the Sea of Japan. Enjoy this remarkable Junmai Daiginjo, well balanced and easy to pair with food.
*Shokumai:Rice not traditionally used for sake production, but rather for daily meal consumption.
