In 2015, the sake world was surprised by the audacity of the Niizawa brewery. While the extreme limit of rice polishing was considered to be 8%, President Niizawa and his team pushed the boundaries by creating a Junmai Daiginjo with a rice polishing rate of 7%.
This exceptional sake, called Zankyo, was born from a ceaseless quest for perfection. Kuranohana rice, originally from Miyagi Prefecture, is polished for more than 350 hours, a long and painstaking process that reveals the very essence of the grain. This rice is then fermented with homemade yeast, giving Zankyo a unique aromatic complexity.
The result is a sake of unparalleled purity and finesse. Zankyo is characterized by a limpid and crystalline color, and a captivating nose with floral and tropical notes.
